SALMON STEAMED IN A BAG WITH GARDEN VEGETABLES & CHILLI

Serves 4

640g or 4 salmon fillets

5g or 1 teaspoon turmeric

5g or 1 teaspoon ginger, freshly grated

220g fennel or 3 cups, sliced

180g zucchini or 1 ½ cups chopped into bite sized pieces

180g leek or 2 stalks, sliced

4g or 4 bay leaves

32g or 2 medium sized red chili, finely sliced

120ml seafood stock

10g or 1 small bunch fresh coriander (finely chopped)

 

Method

1.     Pre heat oven to 150 degrees.

2.     Place all ingredients on a baking tray lined with baking paper, then cover with more baking paper and a tray on top.

3.     Bake for 22 minutes then remove and uncover.

4.     Strain the liquid and place in a pan and reduce by 2/3 then pour over the top of salmon.

5.     Serve and enjoy.
