BANNANA FLAXMEAL PANCAKES WITH BLUEBERRY & LEMON

Serves 4

 

240g or 2 bananas

130g or 2 eggs

20g or 1 tablespoon flaxmeal

20g or 1 tablespoon psyllium husk

2.5g or ½ tablespoon baking powder

10ml or 2 teaspoons tablespoon apple vinegar

80ml or 4 tablespoons coconut oil

80g or ½ cup blueberries

40g or 2 tablespoons coconut shredded

108g or 1 lemon 

 

Method

1.  Peel and mash banana with eggs and fold in flaxmeal, psyllium husk and whisk in apple vinegar and baking powder until fluffy.

2. Heat a skillet pan with a little coconut oil until hot then reduce heat to medium , make small pancakes with batter and cook until they bubble on one side and flip, cook for a further minute. Serve with blue berries and lemons .
